Looks like a light weight version of pre-digital Maxmilian, a distinctive design by Rudolph Koch from about 100 years ago.
Most digital versions are heavy and crude.

The Helzel/Delbanco versions, while not a 100% match, could work as a substitute.

For the small font, Buffalo Western is close but has differences, e.g. the leg on _R_
Very close and well made, but has minor differences from _MUSIC_
For a free version -- close but not identical to _MUSIC_ see BraceletVictorian by Douglas Day.
A Victorian fancy font digitized several times.
Minor differences among the digitizations, but the match to MUSIC is Dusty Circus.
This seems to have been made from Banco, sloped left seven degrees, then width compressed to 60%, and extensively edited.
Don't know if the result was made into a filmtype era font, or just used for these letters.

However, there should be some free similar -- but not 100% identical -- fonts here at Dafont or at Google webfonts.
BTW, I don't know of a font called Canberra that is a match to the image.
Canberra has been used as an alias for Garamond, but the Garamond fonts look different than your image. Note esp. the ear on _g_

I checked Footlong contained in the woff on the website. Does not contain the _K_ or _R_.
Also note the many differences between Footlong and the letters in the carved turkey ad.
Subway website uses Footlong

Sixinch is lighter weight of same font.
Font in this ad is different from Footlong.
Suggestions so far don't have close _K_ or _R_.

Using lower case _r_ and upper case _A_. Other letters match both LC and UC.
