For the rest of the letters a good choice for modification would be Century Old Style with a squeezed width and a weight somewhere between regular and bold.
For the windblown terminals on _T_ the closest I found was Guardi 55 Roman
Move the terminals on the horizontal stroke closer to the center and thicken the vertical stoke.
The letters do not come from a single font and are handlettered or modified.
It is possible to find matches for individual letters that could be used as is or with minor modification.
For the _S_ I suggest Minion Pro Cond Bold
Looks like Bodoni Condensed -- perhaps relettered by hand
DeVinne Ornamental from circa 1900 with a swashed _J_
No need to modify Hellenic.
It's already done in Deming EP -- already suggested by elmo -- which you can get at

Versions under an assortment of names including Lonestar could be modified to make the logo
Garamond, perhaps pre-digital.
