How did you get that Garamond?

This is a problem font embedding and substitution.

Aaaahhh, understand it now, didn't noticed that (that screenshot is not from Adobe Acrobat, right? )

UPDATE: as for the font, it's not Garamond, IMO

Adobe Acrobat replaces the intended missing fonts with Adobe Serif MM

Jordi Garreta a utilisé pour écrire son pdf, Garamond, Garamond Italic et Garamond SemiBold.
