Is there any software to recover data on fonts (style, tags, ...) and store them on specified criteria, in subdirectories?

eg DS-Digital.ttf -> Techno\LCD\DS-Digital.ttf

nope. You'd rather use a font management program (http://www.dafont.com/soft.php#1) but you'll still have to sort the fonts by yourself, sorry.
